Five Tips to Pick Up Your Pace

As the holiday season is upon us, there is no shortage of sweets in sight. We all know the potential that these sweets have in contributing to a bulging waistline, yet we still find it difficult to resist the power of cookies, candies and cakes. To add salt to the wound of our guilt, we also notice the individual sitting next to us who seems to have no problem turning down sweets – and even seems to enjoy eating celery as much as you do a piece of cake. Why is this? The simple answer is taste.
The tongue has between 5,000-10,000 taste buds on it. Each taste bud in turn has about 50 gustatory receptor cells on it. Gustatory receptor cells sense the compounds that attribute to sweetness, sourness, bitterness and saltiness by allowing the compounds to dissolve in our saliva and enter through a taste pore. As the compounds enter our cells, they bind to cellular components that in turn create both an intracellular and intercellular cascade that eventually reaches our brain and gives us the “flavor” of the food.

So why does taste differ so much between individuals, cultures and periods in our lives? That is because our perception of sweet, sour, bitter and salty changes based upon the foods and drinks our mouth is exposed to. For example, if we are constantly eating sweet foods our taste buds will calibrate themselves, causing foods that were once “too sweet” to become the norm. Our taste buds are designed this way so that we will eventually enjoy the food in whatever environment we are in. The problem is that our environment has changed to the point where sweet foods are all too common. We are eating nearly 6 times as much sugar per person than we did just 100 years ago. This equates to about 140 lbs. a year of sugar.

We are in a downward spiral, constantly increasing our tolerance for sweetness. This sadly manifests itself in an increasing waistline; however, there is hope, and the solution is surprisingly simple and quick. A taste bud lives for about 2-3 weeks on the human tongue. For someone to adjust his or her tolerance to sweet foods typically requires avoiding them for only about 2-3 weeks. This short period of time removed from sweets allows one to begin anew, with a greater ability to turn down bad sweets and find greater enjoyment in more nutritious foods.
